Tomato Sweet Corn Salad is a recipe that I created on a whim because we had leftover corn on the cob.

What To Make With Leftover Corn On The Cob

I put leftover corn into a convection oven to warm and eat it the following day.

My sister-in-law purchased a dozen corn on the cob and decided to drop it off at our house.

She had a gathering and intended to use the corn, but it never entered the meal plan.

Instead of throwing it out, she knew we could make something with corn on the cob.

The sweet corn brought out the tang in the tomatoes; aesthetically, the salad is bright.

Like most Canadians, I love sweet corn during the summer and fall seasons in Canada.

We support local Ontario farmers and buy from them when we see their veggie stands.

During the 80s, Mrs. CBB remembers a few of her friends working as corn detasseling.

If you’re looking for summer employment each season, you can apply for corn detasseling with WRDetasseling in Ontario.

The job entailed detasseling corn, and the kids earned a summer income for their savings.

In the UK, it was rare to have corn unless it came from a can or freezer bags.

Off-season, I prefer flash-frozen corn as it keeps more nutrients than processed canned corn.

Don’t limit options when making salads by adding a crunchy texture, which adds to the recipe appeal.

Types Of Ontario Tomatoes

For our 2022 growing season, we chose cherry tomatoes, grape tomatoes, and globe tomatoes.

Popular Ontario field tomato varieties include Sunrise, Pik Rite, Mountain Pride, Pilgrim, Red Star and Ultra-sweet.

  1. Round (slicing/table): Medium-sized, globe-shaped. Ideal for eating raw.
  2. Roma or Plum: Plum-shaped and thick-fleshed. Smaller and less juicy than the Round variety. Excellent for preserving sauces or making tomato paste.
  3. Beefsteak: Similar to Round tomatoes but flatter with fleshier walls and not as juicy. Excellent for both cooking and eating raw. Size varies from small to large.

You will need key ingredients to make an authentic sweet tomato corn salad.

You can build from there once you have the key ingredients for a tomato salad.

I added sweet corn niblets, red peppers, radish, cucumber, red onion, and sliced black olives to this recipe.

The dressing included extra-virgin olive oil, salt, pepper, two minced cloves of garlic and fresh lemon juice.

I used a handful of fresh basil, chives, parsley, two mint leaves, or one tablespoon of pesto.

Wash and dry the herbs with a paper towel, then roll them together and slice thinly.

I’ve also made this recipe with homemade pesto, which carries us through the winter months.

Mix the entire tomato sweet corn salad and add 1/2 cup of freshly grated Parmigiano Regianno cheese.

We buy a chunk of Parmigianno Regianno from Costco Canada.

You’ll find that this is the perfect side salad for any meal or to bring with you to a gathering.

Some people like to buy or make fresh crusty Italian bread to dip into the salad juices.

I enjoy my homemade Italian olive bread for dipping, but I won’t add black olives to the salad if I make it.

Simple Tomato Sweet Corn Salad

I turned leftover corn on the cob into this simple tomato sweet corn salad that we love to dip fresh crusty Italian bread.

Ingredients

  • 2 cups cherry tomatoes sliced In half
  • 2 round tomatoes sliced
  • 1 cup sliced green peppers
  • 1 cup sliced red peppers
  • 4 red radishes sliced thin
  • 2 stalks of celery washed and sliced thin
  • 1 cup sliced seedless cucumbers
  • 1/2 cup sliced black olives
  • 3 cooked ears of corn on the cob with niblets removed
  • 2 cloves of garlic minced
  • 1/2 cup extra-virgin olive oil
  • 1 tsp salt
  • 1 tsp fresh grated black pepper]
  • 1 tablespoon lemon juice
  • Fresh Herbs
  • 1/2 cup each fresh chopped basil, parsley, and chives
  • or 2 tablespoons of homemade pesto

Instructions

  1. Wash all of your vegetables and herbs and pat dry
  2. In a mason jar, add the ingredients for the dressing: garlic, Extra-Virgin Olive Oil, Salt, Pepper and lemon juice. Put the lid on the jar and shake it well to mix.
  3. Grate the Parmigianno Regianno cheese and set it aside in a small bowl
  4. Drain the black sliced olives and run cold water over them
  5. In a large bowl, start adding your vegetables.
  6. Add tomatoes, cucumbers, radishes, green peppers, red peppers, celery, and corn cob niblets, then mix it all.
  7. Pour the dressing you made over the top of the vegetables and mix, so everything is coated.
  8. Llastly, add the grated cheese and mix until the cheese coats all the vegetables.
  9. Let sit for 5 minutes, so the dressing allows the juices from the tomatoes to naturally come out.
  10. Serve at room temperature with fresh crusty bread or garlic bread for dipping.
