Eggless Chocolate Cake is accurate, and, honestly, I had no idea you could make such a moist chocolate cake without eggs.
I know I was just as shocked, and it’s a perfect, thick, moist, and an eggless chocolate coffee cake recipe that everyone should try.
Our son is a massive fan of chocolate cake but is very particular about what kinds, and this eggless chocolate coffee cake was a HIT.
That’s exciting news for us as parents of a picky eater child, even though this is only a treat he gets occasionally.
We’ve even turned this eggless chocolate coffee cake into muffins so he can take them to school.
He’d sooner eat a boxed chocolate cake since it is so moist than a dense homemade cake or brownie (my favorite).
Satisfying Your Sweet Tooth
The other night, I had a chocolate craving, and I was tempting myself to head to the kitchen to make my Fudgy Brownies.
Although my Facebook Fans motivated me to get up and bake, I decided to wait a day as it was a bit late.
During a Facebook conversation, two fans, Christine Weadick and Sarah Jackson, started talking about allergies and eggless cakes.
Sarah’s little one is allergic to eggs and was looking for new, easy, eggless recipes.
It’s not so easy to find eggless cakes at the grocery store, and honestly, your best bet when allergies are involved is to bake it yourself.
Then, Christine, a long-time CBB fan, comes to the rescue with her easy eggless chocolate cake recipe, and we are glad she did.
Eggless Chocolate Cake

Christine went on to post her favorite eggless chocolate cake recipe, and I was intrigued by it.
The next evening, I made her eggless chocolate cake, which turned out so good it was gone within a couple of days.
So yes, you can make an egg-free chocolate cake that will taste amazing.
If you use good organic cocoa, the flavour erupts in your mouth like a blast of chocolate, which I strongly suggest doing.
We buy our Organic Rodelle Cocoa at Costco or find it on Amazon Canada. A little goes a long way. It’s so good.
If you’re looking for an easy chocolate cake recipe that won’t keep you in the kitchen for hours, this is the one.
If you have company coming over and want a last-minute dessert, serve it up, and your guests will clean their plates.
We use this cake to make our son’s birthday every year because we know he will eat it.
Eggless Chocolate Cake With Hints Of Coffee
So, I was happy with the eggless chocolate cake recipe and wanted to switch it up a bit the following day with different flavors.
I wanted to make the best chocolate cake ever, and I didn’t want to use eggs.
So, my eggless chocolate cake wanted to be full of chocolate, but I wanted to have real depth in taste with coffee.
I’ve always wanted to make a moist coffee cake good enough for breakfast!
I mean, what’s the difference? The world feeds kids Nutella to start the day.
Ok, so maybe not a healthful breakfast, but I’m sure it will kick-start the first hour of your day!
You can also use decaffeinated instant coffee if you are worried about caffeine or don’t care but love the coffee taste.
You can also do that if you prefer to leave the coffee out.
Switching Up Cake Recipes
I have a habit of wanting to mess about with ingredients in the kitchen to see what will happen.
Sometimes, it’s not pretty, but it gets easier as you know how certain ingredients work together as you go along.
Learning how to bake a cake, predominantly a basic white or chocolate cake, will help you create signature cakes you can call your own.
You can add chocolate chips, coconut, and nuts, but remember, measurements when baking can be critical to a cake’s success.
Trial and error is the name of the game and the way any good baker learns, so don’t be afraid to try something new.
As I mentioned above, I turned this eggless chocolate coffee cake into muffins, and you can even make a loaf cake.

How To Make Eggless Chocolate Coffee Cake with Chocolate Coffee Frosting

Baking Supplies/Tools
Eggless Chocolate Cake Ingredients
- Cake and Pastry Flour – 3 cups (or you can use all-purpose)
- Baking Soda – 2 tsp
- Unsweetened Rodelle Organic Cocoa Powder – ¾ cup (use the best cocoa you can)
- Pinch of Fleur de sel (Sea Salt) or regular salt
- Granulated White Sugar or Sugar Of Choice – 2 cups
- Extra Virgin Olive Oil or Avocado Oil – 3/4 cup
- Instant Coffee or Decaf Instant Coffee– (1 tbsp of instant coffee in 1/3 cup hot water)
- Greek Plain Yoghurt – 1/2 cup, room temp (or sour cream)
- White Vinegar– 1 tsp
- Pure Vanilla Extract – 1.5-2 tsp (depends on how much you like vanilla)
- 2 Cups of water
How To Make An Eggless Chocolate Cake
Method- Preheat- oven to 350 degrees
- Sift your dry ingredients into a mixing bowl.
- Add in the wet ingredients.
- Mix just until combined (don’t over-mix)
- Pour batter into an ungreased, non-stick 9×13 cake pan.
- Bake in the oven at 350 degrees for about 30-35 minutes.
- Check with a toothpick to see if it comes out clean, and then it is done
Chocolate Coffee Frosting
- Icing sugar – 3 cups
- Pure Vanilla extract – 2 tsp
- 4 tbsps of hot water mixed with 1 tbsp instant coffee
- Unsweetened Cocoa powder – 1/2 cup
- Softened Unsalted Butter– 1/2 cup
How To Make Chocolate Coffee Frosting
- Combine all ingredients in a mixer or with a hand-mixing gadget until it’s light and fluffy.
- If you like lots of icing, double the recipe.
- On top of the icing, I put a few chocolate chips or add whipped cream, powdered sugar, or fresh fruits and jam.

This eggless chocolate cake is perfect for those who don't eat eggs and for those who do.
Ingredients

- 3/4 cup Extra Virgin Olive Oil or Avocado Oil
- 1 tsp Instant Coffee or Decaf Instant Coffee– (1 tbsp of instant coffee in 1/3 cup hot water)
- 1/3 cup hot water for instant coffee
- 1/2 cup Greek Plain Yoghurt – room temp (or sour cream)
- 1 tsp White Vinegar
- 2 tsp Pure Vanilla Extract
- 2 cups of water
- Chocolate Coffee Frosting
- 3 cups Icing sugar
- 1 tsp Pure Vanilla extract
- 4 tbsps of hot water mixed with 1 tbsp instant coffee
- 1/2 cup Cocoa powder
- 1/2 cup Softened Unsalted Butter
Instructions

- Combine all ingredients and mix in a mixer or with a hand mixing gadget until it’s light and fluffy
- If you like lots of icing, double the recipe.

You know I have to be honest I was very skeptical at first with the eggless cake but wow, did it show me a thing or two. Great cake, very moist. Have you made eggless cakes before?

I’ll try this one mate! Every time I think of baking a chocolate cake I end up buying one instead because the ingredients are so expensive and it’s usually far cheaper to buy one. I want to start cooking more though so this budget option is going in the recipe book for future use!
Go for it. Ya you can buy mixes on offer for $1 but you don’t know what is in them. We pay top dollar for pastry chefs to make cakes from scratch so why not do it ourselves.
