Strawberry Rhubarb Chia Seed Jam Delivers<\/h2>\n\n\n\n<p>I don&#8217;t have to imagine because we&#8217;ve tried and loved it!<\/p>\n\n\n\n<p>We&#8217;ve also made homemade keto ice cream with the jam, then topped it off with more of the preserve.<\/p>\n\n\n\n<p>It&#8217;s all-around easy to make and deliciously healthy.<\/p>\n\n\n\n<p>I love this jam because you don&#8217;t have to slave over Jam<\/h2>\n\n\n\n<p>Essentially this is a refrigerator or freezer jam which means you can store and enjoy it without canning.<\/p>\n\n\n\n<p>The process takes about 30 minutes, but keeping it in the refrigerator overnight is the key to its success.<\/p>\n\n\n\n<p>We&#8217;ve had this fantastic rhubarb growing in our back garden all these years, which we presume made its way into the ground about 20 years ago but hardly used.<\/p>\n\n\n\n<p>We give it away most years because we can&#8217;t keep up with the growth, as it gives us about 3-4 crops a year.<\/p>\n\n\n\n<p>Everyone visiting us crab apples from our mature, giant tree that we also struggle with. <\/p>\n\n\n\n<p>There is only so much bounty a family can eat, so we pass it on to friends or just about anyone who wants it.<\/p>\n\n\n\n<p>The first couple of years after we moved into our house Mrs. CBB and I made lots of crab-apple spice jelly, which we still have in our cellar.<\/p>\n\n\n\n<p>We also used the jelly to make gifts for a simple baby shower, which the guests loved.<\/p>\n\n\n\n<p>It&#8217;s great jelly but has sugar, so we haven&#8217;t been into it for a while and give it away when friends come around.<\/p>\n\n\n\n<p>Before the jelly, we also made a lovely <strong><a href=\"https:\/\/canadianbudgetbinder.com\/2015\/07\/05\/rhubarb-cherry-applesauce\/\">Rhubarb Cherry Applesauce<\/a><\/strong> and Rhubarb Blueberry sauce, which we used on <strong><a href=\"https:\/\/canadianbudgetbinder.com\/2015\/11\/22\/cinnamon-cream-cheese-pancakes-low-carb-gluten-free\/\">pancakes<\/a><\/strong>, <strong><a href=\"https:\/\/canadianbudgetbinder.com\/2019\/08\/11\/simple-keto-chaffle-waffles\/\">waffles<\/a><\/strong>, and <strong><a href=\"https:\/\/canadianbudgetbinder.com\/2018\/04\/15\/keto-crepes-low-carb\/\">crepes<\/a><\/strong>.<\/p>\n\n\n\n<p>Since Mrs. CBB has enjoyed her low-carb diet cutting sugar and carbs, we haven&#8217;t noticed the rhubarb until we discovered it is excellent for digestion.<\/p>\n\n\n\n<p>Generally, though you are in the induction phase of a low-carb diet such as Atkins, you will want to
